For the Bread:

- 1½ cups mashed ripe bananas (about 3–4 bananas)
- 8 oz crushed pineapple (with juice)
- 1 cup sweetened shredded coconut
- ⅓ cup chopped pecans
For the Cream Cheese Frosting:
- ½ cup butter, softened
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- ½ cup chopped pecans (for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease two 8×4-inch loaf pans or line with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs and vanilla.
- Sift in flour, baking soda, cinnamon, and salt. Stir just until combined—don’t overmix.
- Fold in mashed bananas, crushed pineapple (with juice), coconut, and chopped pecans.
- Divide batter evenly between the pans. Bake for 30–35 minutes, or until a toothpick comes out clean.
- Let loaves cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
- While cooling, make the frosting: beat together butter and cream cheese until smooth. Add powdered sugar and vanilla, and beat until fluffy.
- Spread frosting over cooled loaves and sprinkle with additional pecans.
