  • 1½ cups mashed ripe bananas (about 34 bananas)
  • 8 oz crushed pineapple (with juice)
  • 1 cup sweetened shredded coconut
  • ⅓ cup chopped pecans

For the Cream Cheese Frosting:

  • ½ cup butter, softened
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup chopped pecans (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8×4-inch loaf pans or line with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs and vanilla.
  4. Sift in flour, baking soda, cinnamon, and salt. Stir just until combined—don’t overmix.
  5. Fold in mashed bananas, crushed pineapple (with juice), coconut, and chopped pecans.
  6. Divide batter evenly between the pans. Bake for 30–35 minutes, or until a toothpick comes out clean.
  7. Let loaves cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
  8. While cooling, make the frosting: beat together butter and cream cheese until smooth. Add powdered sugar and vanilla, and beat until fluffy.
  9. Spread frosting over cooled loaves and sprinkle with additional pecans.
