Ingredients

  • 1 tablespoon olive oil
  • 1-inch knob fresh ginger, grated
  • 2 cloves garlic, smashed
  • 2 celery stalks, finely sliced
  • 1 zucchini, diced
  • 1 small fennel bulb, chopped
  • 1 teaspoon turmeric
  • ½ teaspoon ground cumin
  • 4 cups low-sodium vegetable broth
  • Juice of ½ lemon
  • Fresh parsley, to finish
  • Salt and black pepper to taste

Instructions

  1. In a large saucepan, heat olive oil over medium heat.
  2. Add ginger and garlic; sauté until fragrant (about 1–2 minutes).
  3. Stir in celery, zucchini, and fennel. Cook 3–4 minutes until slightly softened.
  4. Sprinkle in turmeric, cumin, salt, and black pepper. Stir well to coat vegetables.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 15–20 minutes until vegetables are tender.
  7. Stir in lemon juice and garnish with chopped parsley.
  8. Serve warm. Sip slowly as part of a gentle gut reset.
